Random recipes – roasted veg, veg stir fry

I was tidying out a drawer and found a couple of blank postcards on them with these recipes. I’m afraid I don’t know how I came across them (poor recipe / coding documentation!) so I hope they’re not super copyrighted and I get into trouble…

Summer Roasting Vegetables (350g)

Courgette
Red onion
Yellow Pepper
Cherry tomatoes
Sunflower oil
Basil paste
GM 7 (220˚C / 425˚F)

20-25 mins in tray

I can only assume that this one came from a packet from Tesco as putting that into Google gave a similar weight.

Stir-fry Veg

Beansprouts
Cabbage
White onions
Carrots
Mushrooms

Oil (tablespoon) + frying pan and heat for 3mins or more.

Feta, red onion, cucumber, cherry tomatoes

Marks and Spencer do the world’s most delicious snack thing with feta. I don’t know what flavourings and oils they add (I suppose I could look at the ingredients list!), mine’s much less exciting. I actually made a Vine featuring M&S’s feta snack, using it as an example of what happens when the immune system destroys the insulin-producing cells in the pancreas leading to Type 1 diabetes. Admittedly pretty niche but it’s here if you want to see the role that the feta cheese cubes played in this.

Ingredients (how much depends on whether you want a snack or a meal)

  • Feta, chopped up a bit
  • Cucumber, also chopped
  • Cherry tomatoes – they’re wee buggers to prong with a fork so chop away if you’d rather not fight with them, but I quite like the challenge
  • Red onion, sliced – it’s fine to eat raw by the way

Mix together, add a drizzle of toasted sesame oil (it’s delicious) or olive oil (or any oil you like) and if you like sprinkling on dried herbs now’s the time to do it. I’ve never bothered with salt or pepper but feel free 🙂
